This is one of the recipes that unfortunately didn’t make the cut for Our Table in Croatia, but it’s too beautiful not to share here! Rozulin is traditionally made with highly scented garden roses and grape brandy and takes 1-2 months for the flavors to develop. It’s served as a welcome drink in the Dubrovnik region and used in all kinds of cakes and desserts.
The roses should be picked first thing in the morning and for a strong flavor, it’s good to use 20-30 roses. Oh my goodness, I loved working on this one.
The rose petals get layered in a large jar with sugar, and brandy poured over all, filling the entire jar. The roses infuse the brandy for a few weeks and then the jar sits in the warm sun for at least a month until the sugar breaks down. The petals are then strained and the flavor continues to develop.
