When we were on Ishigaki Island about a month ago for our anniversary getaway, we had the most refreshing sorbets and frozen yogurts, made from fresh mangoes and fruits. This recipe is inspired by the beautiful colors and flavors from that island, which took our breath away. I’ll never forget our first taste of Ishigaki during the hour-long drive from the airport to the other side of the island, passing fields upon fields of sugar cane swaying in the breeze along the coast, lush mountains rising tall in the rice paddy fields, the brilliant blues, turquoises and greens from the Philippine Sea, the loud hum of summer cicadas cutting through the dense heat, and the serenity of remote island life. Though only an hour flight south of where we live, it felt other-worldly. When a place captivates your full attention, you take that inspiration home with you, and {if you’re like me!} want to create something delicious from it.
One minute in the Okinawan July heat and it’s a sorbet slushy (:
Peach Mango & Citrus Sorbet, Inspired by Ishigaki Island
2 C frozen peaches
2 C frozen mangoes
juice squeezed from 1-2 lemons
juice squeezed from 1-2 oranges
1 teaspoon coconut oil
1 teaspoon honey
2 C frozen peaches

1 teaspoon coconut oil
1 teaspoon honey
Using a blender, combine all of the ingredients until completely smooth. It helps to let your frozen fruit thaw just a little before blending them. If you’re still having difficulty, add more orange or lemon juice. Taste; add more honey if you prefer a sweeter flavor. Pour into an air-tight container – a mason jar works wonderfully! – and place in the freezer until the sorbet is as firm as you would like it. To prevent it from becoming an ice slushy, keep it in the refrigerator afterwards.

I live in South Africa and my Husband and I are planning to do our 1 Year Anniversary trip in December (so that we can take more leave and go away for longer) instead of on our Anniversary on November 10… Would you recommend Ishigaki Island as a relaxing getaway and do you know what the weather is like that time of year? I made this for my Mum and I. I thought it wouldn't turn out well, because things don't with me hahaha, and it was absolutely amazing! This is so pure and fresh and that you know what is in it is the best! If you're not sure of making it…well make it! We had visitors the next day and they had some an fell in love too…in the evening Mum and I got the tub of Sorbet and, armed with a spoon each, ate it all out of the tub ;).
