My Mom made this for us growing up, always always served it with vanilla ice cream on top, and reminded me this week when I asked for the recipe to do the same. That simple cobbler, hot and fresh out of the oven with ice cream melting into it, transformed a weeknight dinner at home into something special.
We made that absolutely delicious treat again this Sunday while celebrating Advent. A shared warm blackberry cobbler with melting vanilla ice cream for the start of the joyous season of waiting, preparation and hope.
Isaiah 9:2
The people walking in darkness
have seen a great light;
on those living in the land of deep darkness
a light has dawned.
Blackberry Cobbler
{serves about 4}
1 C flour
1 C raw sugar
1 egg
1 TBS baking powder
pinch of salt
1/4 C butter, melted
1 package frozen or fresh blackberries, or mixed
Preheat the oven to 350 degrees F.
Lay the berries {I used frozen blackberries and fresh raspberries} on a 9×13 pan or similar; mix the dry ingredients together and then mix in the egg. Cover the berries with the mixture and then drizzle on the melted butter.
Bake for 30-35 minutes or until lightly browned on top. Serve with vanilla ice cream.
