In keeping with my theme this week of simplicity, and as promised, here is another easy recipe (can you even call this a recipe??!) or better yet — a small meal or snack idea that John Shea and I love. I start with a layer of frozen mangos, then greek yogurt, granola, fresh strawberries and whatever other fruit I find at the farmer’s market (today there were amazing peaches! blackberries and blueberries) and top with rose honey for something special.
Cam and I had the most delicious rose honey at Yafa in Carmel by the Sea (highly recommend it!) and I’ve been making it at home and adding it to our yogurt ever since.
Mango Parfaits with Rose Honey
Begin with a layer of frozen mango chunks, then top with greek yogurt, your favorite granola (I like making mine! Recipe here) and top with fresh seasonal fruit.
For the rose honey, add 1/8 teaspoon of rose water to 1 1/2 – 2 tablespoons of honey (depending on how strong you want the flavor to be) and drizzle on top. Poppyseeds also add a nice crunch.
Have a wonderful weekend!

I COMPLETELY agree with Brittany above… I love how you make everything so beautiful. There is a certain joy to the soul that comes from just sitting down and looking at your beautiful pictures. It is honestly so inspiring. When I see your pictures of your home life (throughout all different seasons/countries) I am reminded of Edith Schaeffer's quote: βI am sure that there is no place in the world where your message would not be enhanced by your making the place (whether tiny or large, a hut or a palace) orderly, artistic and beautiful with some form of creativity, some form of βartβ". I think you may have posted a quote by her before (?) but this is what I think of when I read your blog… your message of God's love is beautifully displayed with artistry. Thank you so much for sharing and encouraging this little heart of mine!
Blessings,
Rebecca π
