We keep our dining table permanently outside so we’ll eat there every night. Honestly, we spent the majority of nights this summer eating inside, sprawled out under the AC for reprieve from the intense heat and humidity. But the weather lately has cooled down and is amazing. Posting photos from our home and what we eat is almost like you all are here and I’m getting to cook for you!
My beautiful Okinawan friend, Sayah, hanging out with me this morning for breakfast {her first pumpkin pancakes}.
My kind of lunch. Cam introduced me to the joy of ceasar salads, but to avoid the unnatural hydrogenated fats in store bought dressing, I made my own with greek yogurt, lemon, apple cider vinegar, garlic, pecorino, salt and pepper. It was creamy, fresh and flavorful.
Greek Yogurt Ceasar Salad Sammie
{serves 2}
1/2 C Plain Non-fat Greek Yogurt
1/2 Lemon
2 1/2 Tablespoons Olive Oil
1 Garlic Clove, Minced
2 Tablespoons Apple Cider Vinegar
1/3 C Freshly Grated Pecorino
Head of Romaine Lettuce, Chopped
1 Teaspoon Salt & Pepper
Baguette or your favorite bread
Red Onion & Tomatoes
I actually meant to use a whole cup of yogurt, but I dropped it on the floor and lost half of it. Life of a klutz.
Squeeze the lemon into the yogurt, olive oil, garlic, apple cider vinegar, salt & pepper, and pecorino, reserving some of the cheese to top your salad. Mix together and add more salt or pepper as needed. Top on bread with more pecorino or eat as is.
