Good morning from Okinawa!
I made Cam homemade granola yesterday afternoon and it could not have been more easy, delicious, or cost-effective. It also makes your house smell wonderful while baking, and is a fantastic gift to give in a mason jar.
I hope you enjoy this morning with some yummy granola and yogurt..
…while we get ready on this side of the world to go to sleep.

Homemade Granola with Coconut Oil
{makes about 10 cups}
4 C rolled oats {I used Bob’s Red Mill gluten-free}
2 C chopped raw almonds
2 C chopped raw walnuts
3 C chopped mix of dried figs, dates, mango, papaya {please feel free to use your favorite dried fruit}
1/2 C coconut oil
1/4 C honey
Preheat the oven to 350 degrees F.
In a large bowl, combine all of the ingredients except for the dried fruit. Spread the granola mixture on a parchment paper lined baking sheet and bake for 10-20 minutes, or until the granola is as browned as you would like it. Once out of the oven, return to the large bowl and combine with the dried fruit. Once the granola has cooled, store in an airtight container or mason jars. It should hold for about 2-3 weeks. Enjoy!

Thank you! 1/4 c of honey was just enough to give it some sweetness and flavor without being too much. the coconut oil adds a great flavor too! xoxo

Yum Yum Yum i've gotten So creative here in Nepal because there is hardly any snacky/breakfast foods I can eat! So…i've been experimenting with making granola! I'm trying this recipe next!!! love ya darlin! love Katie

This recipe came at a great time! I was talking today that I wanted to make homemade granola to eat for breakfast and now I can. I'm glad that you're able to find these ingredients in Japan, because I'm going to be moving there in a month or so and I would still like to be able to make granola ๐
