The Best Chopped Salad with Garlic Lemon Vinaigrette
{serves 4+}
1 large head of crunchy romaine lettuce, rinsed and chopped
1 cup strawberries, chopped
2 avocados, chopped
6-8 oz. Gorgonzola cheese, crumbled
1 cup walnuts
1 cup cooked chicken, chopped
1 cup cooked bacon, chopped
1 cup apples, chopped
1 cup red onion, chopped
1 cup grapes, halved
1 cup oranges, chopped
For the dressing:
2 ripe lemons
4 cloves of garlic, crushed
1/2 cup extra-virgin olive oil
1/8 cup red wine vinegar
1/4 cup honey
1 tsp. Dijon mustard
Fine sea salt, to taste
Arrange each of the chopped salad ingredients in separate bowls. For the
dressing, squeeze the lemons directly into a mixing bowl to allow any
pulp to come out. Whisk with the garlic, olive oil, red wine vinegar,
honey, mustard and a pinch of salt. Taste, and add more salt as needed.
If the dressing is too tangy for your taste, add more honey. Toss the
salads when ready to eat. Enjoy!
NOTE: If serving more than four people, double this recipe.

Wonderful summer salad… And filling as well. Today it's going to be very hot here in Oporto, so I might for something close to this for dinner ๐
Gabriella Hoell says
Just a tiny bit jealous ๐
The temperatures have dropped here, but I'll file this away for a hot day that will hopefully still show up this summer ๐
Marshall says
you're kidding! already!? Actually, I'm a bit jealous of your dropping temps. (: It's hotttt here.
Gabriella Hoell says

Your kid's already a bit of trouble – stirring up trouble, better keep an unwavering eye on him! ๐ And yummm this looks so good, I really love the idea of incorporating fruit into this salad!
Marshall says
My mom first taught me to put fruit in salad – she's a cooking genius (:
Tim and Lanna Britt says
mmmm love me some bacon on a salad.
Just realized it would be pretty ironic if you went into LABOR on labor day! Praying for you, sweetness!

Looks deliciously yummo! Definitely trying. Oh my goodness, aren't those false alarms exciting! I loved the waiting, like a surprise was coming at any minute!! P.S. romaine lettuce is a natural form of pitocin….. if you ever get anxious!! J was basically force feeding me "labor salads" the last couple weeks of both pregnancies!!(:
Marshall says
Really!!!!? I had no idea! Bianca, you just decided our dinner for tonight.. and the next night and the next night…. (; Yes, that false alarm really was exciting. I was actually disappointed when the contractions stopped. What a change from when I was scared out of my mind a few weeks ago!!

Okay, kind of a serious question: why doesn't your blog have approximately five million followers? Every post looks like a magazine. I just love the way you make every day life look so beautiful. And if I don't get to eat this salad in the next few hours, I might die.
Marshall says
Haha… I guess I'm just really lame?! But seriously, I'm barely on social media and should really be sponsoring bigger blogs, but alas getting ready for a baby is expensive! (: Thanks for your super kind words though!!
Lauren Socha says
I was going to ask on an older thread but thought it might not be seen… I wanted to know where you got that lovely navy striped rug in your bedroom? It is beautiful! Thanks!
Nicole says
