These have become a new favorite for my better, larger half. I sent the leftover pancakes with him to work the other morning, sandwiched with whipped cream, and didn’t even have to remind him to grab them before leaving. It’s amazing how homemade food can brighten up a day. Getting my kiss goodbye each morning is what does it for me!
This is the chocolate chip pancake recipe I throw together whenever we want a big breakfast, only this time I added pumpkin and spices and homemade whipped cream {topped with maple syrup too} (:
Cinnamon & Spice Pumpkin Pancakes
{serves 4}
3/4 C. Pumpkin
2 Eggs
1 3/4 C Milk
2 C. Flour
3 T. Olive Oil
1/4 C. Raw Sugar
1 teaspoon Almond Extract
1 teaspoon Vanilla Extract
2 T. Baking Powder
1/2 teaspoon Salt
2 T. Cinnamon + more for dusting
1 teaspoon Nutmeg
1 teaspoon Cloves
Maple Syrup
For Whipped Cream:
1 cup/carton of Heavy Whipping Cream
1 T. Vanilla Extract
2 T. Finely Granulated Sugar
Whisk the eggs, milk and olive oil. Fold in the dry ingredients. Add in the pumpkin and spices and cook on a heated pan over medium heat, with butter or olive oil.
Using a mixer, beat the whipped cream ingredients together until peaks form. Spread into a freezer-safe pan to freeze and cut shapes from using a cookie cutter. Or serve fresh with maple syrup and cinnamon dusted on top. So yummy!
