Colorful fresh berries, fireworks, bbq’s, the heat of summer… it’s time to celebrate our beautiful nation’s freedom and independence. We’ll be celebrating all day at the beach with friends — both American and Japanese! and bbq’ing until the fireworks at night. This is the most delicious and perfect dessert for the day: simple with only a few ingredients, refreshing, and a bit of decadence in the chocolate crust and edible gold flakes.
You can prepare this dessert ahead of time tonight or in the morning, keep it refrigerated, and serve it in a large dish or a cute assortment of small bowls. To all of our American family and friends, Happy Fourth of July!!
Chocolate Crusted Frozen Yogurt Berry Cakes for the Fourth
{makes 6 small bowls or 1 9×9 inch pan}
2 C fresh strawberries, rinsed and sliced
1 C fresh blueberries, rinsed
edible gold flakes {optional}
2 1/2 C crushed graham cracker crumbs
2 1/2 C good quality milk chocolate, broken into pieces {look for a chocolate that only has a few ingredients and uses cocoa butter, not an artificial additive}
8 TBS butter, room temperature and cut into eighths
19 oz french vanilla greek yogurt {whole-milk}, chilled
Pour the graham cracker crumbs into a large mixing bowl.
Add the chocolate pieces into a small saucepan with the chunks of butter on top, turning your stovetop to medium low. As soon the heat is on, begin stirring. The chocolate and butter will melt very quickly, so continue stirring so it doesn’t burn or stick to the bottom of the pan. When there are still a few chunks left, remove from the heat and continue stirring until the mixture is completely smooth. Poor into the graham cracker crumbs, and use a fork to fully combine. Divide the mixture evenly between 6 small cups, or in one 9×9 inch baking pan. Use your fingers to form the crust to the edges of the serving dish{es} and place in the freezer.
This shouldn’t take longer than about 10-15 minutes! It’s a very quick and simple dessert. After the crust has had a few minutes to cool and form in the freezer, fill it with the chilled greek yogurt. You can either top the desserts with the fresh fruit at this point, or wait until it’s time to eat. Place back in the freezer, covered for about two hours. Keep in the refrigerator until ready to serve. Top with the edible gold flakes for a little more glam!
