We had our first official snow day today -- the kids went to bed giddy last night (me too!!) thinking about waking up to snow and Daddy being home. It was so beautiful out that I had to share... Thanks to Cam clearing a large section of our land, he was able to expose a bunch of beautiful hardwoods (and a magnolia) that had been totally covered in dense pine tree forest. Creamy Winter Greens Pasta with Lemon Garlic Chicken & Walnuts
We are loving this pasta so much I've already made it twice this week. It's been a delicious way to warm up with all the cold weather we're having. The creaminess is thanks to coconut milk... and cheddar and mozzarella cheese, too! This can be made in one pan and is an easy way to get in as much greens as you'd like! Happy first day of 2018!!! The Lord gave us this chunk early on in 2017 and we are all so grateful for the gift of her! We asked the kids what they are most thankful for this past year and they began shouting out family members and friends along with "food, bath time!!, our home!!, palačinke! and chocolate."
