Banana Chocolate Yogurt Muffins
{makes about 1 dozen}
3 ripe bananas
1/2 C whole greek yogurt
1 C chocolate chips
1 1/2 C flour
1/2 C olive oil
1 egg
1 C raw sugar
1/2 teaspoon sea salt
1 tbs baking powder
1 teaspoon nutmeg
1 tbs vanilla extract
Topping:
1 tbs raw sugar
1 tsp cinnamon
1/4 bar of high quality milk chocolate, chopped
Preheat the oven to 375 degrees F.
Whisk the egg with the olive oil and add in the greek yogurt. Using a fork, mash in the bananas. Stir in
the flour, sugar, salt, baking powder, nutmeg and vanilla, until just
combined. Be careful not to stir too much or your muffins may collapse
once out of the oven! Gently fold in the chocolate chips. Fill a greased muffin pan {lined or not!}
with the batter to the top for each cup. Be generous as you
sprinkle on the topping on each muffin, and stick the chopped pieces of chocolate on top. Bake for about 20-25
minutes, or until you can place a toothpick in the middle of a muffin
and it comes out dry.

I have roughly a week and half longer of being prego…which means I only have a week and a half to indulge in my sweet cravings while using the fact that I'm pregnant as an excuse. I'm going to have to boycott your delicious sweet recipes from your blog once the baby is here, or I risk never losing my baby weight. Now I'm gonna go wait on my bananas to go ripe. lol.

No no the first week post birth is exactly like being pregnant! "I just birthed a human being I will eat all the things!" Week 2 when you stop losing 10#s a day is when you realize you can't eat everything. Congrats on your baby!

My husband and I LOVE banana chocolate muffins! I've never made them with yogurt though, so maybe I'll need to try these.
